Directions

  1. Boil large pot of water, add barley.
  2. Reduce heat, cover, simmer 50 minutes till tender.
  3. Drain and rinse under cold running water.
  4. In food processor, puree basil, cheese, oil and garlic.
  5. Season to taste.
  6. In bowl, toss basil mix through barley.
  7. Add corn and tomatoes.
  8. Can be made 2 days ahead and refrigerated.
