Basic Ham & Beans (Pressure Cooker)

  • Cut up onion, garlic and ham.
  • Rinse beans and remove any that are discolored.
  • Place all ingredients in pressure cooker with seasonings to taste.
  • Turn on high pressure for 25 minutes. (If you have an electronic pressure cooker the meat setting is great for this recipe).
  • Remove bay leaf.
  • Serve with cornbread!

The soaking of the beans overnight is probably what will yield a 25 minute cook time but if you don't have that time available then I would double the amount of water and cook for 45+ mins for tender beans. I usually cook this recipe 2lbs beans, 8 cups water and up to 2lbs ham with NO other additions except salt and pepper when serving it. If your beans were soaked and absorbed water and look to have doubled then follow these directions for the above and it will rock! GREAT DINNER!!!!
     
  2. I took the rgraykentucky advice on the amount of water & cooking time then I added 2 carrots & 3 celery and a ts of thyme. 2 pounds of ham, 2 Pounds of beans, 8 cups of water 45 minutes.

  3. I soaked the white beans for three hours. Kicked up the time to 36 minutes Added one more cup of water. Perfect beans!
     
  4. I've made this twice and it turned out great each time. I did let my beans soak for a short time before adding them to the pot (1-2 hours). The first time they didn't soak up any of the water, so I doubt this made much difference to the final product. The second time I had a different brand and they soaked up a lot of the water within an hour. Both times I needed to cook them for 50 minutes though. Flavor was great though!

  5. This is FABULOUS! And so easy! The first time I prepared it just as the recipe directed. But the beans were still a bit crunchy. So I fired up the cooker for another 25 minutes. PERFECT! I didn't add any additional spices or anything. (I did use our Christmas ham - no bone, just ham pieces - but the flavor was wonderful!)<br/><br/>I will make this again - and again!
