ingredients
- nonstick cooking spray or paper baking cup
- 2 1⁄4 cups all-purpose flour
- 1⁄4 cup sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 2 eggs
- 1 1⁄4 cups milk
- 6 tablespoons unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
directions
- Preheat oven to 400 degrees. Grease or line muffin tins.
- Whisk the flour, sugar, baking powder, and salt in a medium bowl until well combined. Set aside.
- In a large bowl, whisk the eggs. Whisk in the milk, melted butter, and vanilla.
- Stir in the flour mixture until moistened.
- Fill the tins 3/4 full and bake for 18 minutes.
- Cool for 10 minutes in the pan and 5 minutes out of the pan.
