  • In a saucepan, bring to boil the rice and water. Reduce heat, cover and let simmer at low heat 10 to 15 minutes or until water is absorbed. Let rest for 5 minutes.
  • Meanwhile, in a food processor, reduce the basil, oil, lemon juice, garlic, salt and pepper in a rough puree. Incorporate the basil mixture to the rice and stir.

  1. Thanks for sharing your recipe Boomie, it was quick and very easy to make. I really enjoyed the subtle flavors but my dh not so much. He felt that it could use more salt, garlic and lemon. It made a lovely meal served with pan fried steak, onions and tomatoes. Made for Aussie Swap 60.
     
  2. This was an okay recipe until I added garlic butter to it just to add a bit more flavor. It was much better after this addition ;) I chopped the basil up in my food processor just because I prefer it that way.
     
  3. This was a nice change on plain old rice. The basil flavor really came through. Next time I would add more salt and garlic though. I think this would be a refreshing side dish in Summer. Made for Newest Zaar tag.
