Basil Cream Chicken

directions

  • Saute chicken, onions, and mushrooms in oil for 4 minutes.
  • In lg saucepan, melt butter; stir in flour until smooth.
  • Add chicken broth, boullion and cream.
  • Stir in basil and pepper.
  • Bring to a boil; cook and stir for 2 minutes.
  • Combine with the chicken mixture.
  • Serve over fettuccini.

  1. Inez, you've gone and done it again! This is a tremendous dish, the sauce is so creamy and the basil flavor really stands out! I followed the recipe exactly and wouldn't change a thing! This one will be made often by me!
     
  2. Oh my gosh, this is sooooooo good! The only substitution I made was milk for the whipping cream since I didn't have any cream. I served this over mashed potatoes and it was delicious; I will try it with the pasta next time. I made your Fresh Green Beans Delux (recipe #33568), what a meal!
     
  3. Inez... this was wonderful! The only change I made was reducing the amount of mushrooms, because I only had a few on hand. I served this with a salad and warm breadsticks. My husband even gave it a 5 star rating too, and he isn't very fond of chicken... so that is saying alot!!! I will definitely be making this dish again!
     
  4. A good family dish thanks Inez. The basil gave it a nice fresh finish. I make similar dishes, and like to cook with wine, so next time, I will sub some wine for the water, and add some parmesan to the sauce before serving.

  1. What more can I say. I did add some garlic as suggested, used 5T of fresh basil and had to use milk instead of cream. It was perfect. Thanks.
     
  2. Used a whole 1lb box of spaghetti, no mushrooms and milk instead of cream. This was fantastic. It reminded me of Pasta Roni, which I love but no longer eat due to it's unhealthiness. I'm looking forward to trying this with other spices.
     
  3. my family loves this dish! i reduce the fat by using milk instead of the whipping cream. it is a bit watery at first, but after sitting with the pasta for a couple minutes, it is soaked up nicely. i also add a lot more basil (personal preference!) next time, i will try adding some veggies. this is a very yummy meal - thanks a bunch, MizzNezz!
     
  4. Very, Very good. I sauteed some diced ham for a little salty bite before adding the veggies. If I had pancetta at the time, I would have used that. I also used leeks instead of onions and added roasted garlic. Sooooo perfect. My Fiance's new favorite dish!
     
  5. Reallly yummy creamy sauce. Used Italian seasoning instead of Basil and thinking about using some cream cheese with it next time?

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
