Basil Linguine

- 1⁄4 lb linguine (fresh or dried)
- 2 teaspoons olive oil
- 1⁄2 cup fresh basil, chopped
- salt and pepper
directions
- Bring a large saucepan filled with 3 to 4 quarts of water to a boil. When watercomesto a boil, add pasta and cook 3 minutes for fresh or 9 minutes for dried. Drain, leaving about 2 Tbl pasta water with the pasta. Add olive oil to pasta and toss well. Add basil and salt and pepper to taste.

This is just a good, fundamental linguine recipe that we really enjoyed. I can't seem to ever leave well enough alone (no reflection on the chef kymmarie:-) so of course after I added some of my fresh basil to the dish, I also got out some pine nuts and litely roasted them. When they were done, I tossed them onto the linguine and topped it all off with a tablespoon of freshly grated parmesan reggiano. Delicious!! By the way kymmaire, I see you are from North Port. I go down to NP 3 times a year and one of my favorite places to eat a quick meal is at Momma's on 776 heading into Englewood. Contact me if you like. Thanks for the recipe!
