Bass with Glaze

"Here's and old recipe I've used often and is pretty tasty. Fresh Bass fillets are baked seasoned with lemon and thyme. When using a hot oven and short cook time, you avoid over cooking the fish."

  • Preheat oven to 400 degrees.
  • Sprinkle filliets with salt, lemon juice and thyme.
  • Place in a lightly greased baking dish.
  • Cover tightly.
  • Bake at 400 degrees for approx.
  • 8 to 10 minutes.
  • Uncover and glaze with a mixture of sour cream, mustard, green onion and pimiento.
  • Return to oven for 2 to 3 more minutes.
  • Serve on platter.

  1. Quick, easy and very tasty; great way to serve fresh bass fillets. A neighbor gave us a lot of these fillets and I'd never made them before so started searching Zaar and so glad I found this one - I always worry about over cooking fish and followed this recipe exactly including cook times and it came out perfect. Served with garden fresh tomatoes salad and corn and it made a wonderful dinner. Thanks Chuck for a very nice recipe
     
  2. Large mouth Bass and Small mouth Bass,or Stripe. I just happened to use a fish that was a Bass and it was very good,I did the sour cream.
     
  3. Sorry Chuck I didn't catch the size of it's mouth but this is one delicious way to do sea bass. Followed the recipe exactly - the result a very tasty, eye appealing recipe. I served it with new steamed carrotsm fresh steamed green beans and plain cooked potatoes Excellent thanks Chuck. PS I know there really is a fish called Large mouth Bass I just happened to use Chilian Sea Bass

I’m over the hill and heading down the back side at a rapid rate it seems, single, and retired now. My loves? Good friends, most of all. After that I guess it would be wildlife and photographing it. In fact, I love anything that deals with wild animals and the outdoors. Then comes playing with my dog and making a mess trying to cook in the kitchen or around the fire pit, grill or smoker while enjoying a good tumbler of whiskey (whisky).
