  • Preheat oil to 350 degrees.
  • Combine 1/2 cup oil and egg; beat well.
  • Add remaining ingredients except oil for frying and stir until well blended.
  • Dip shrimp into batter to coat.
  • Drop shrimp into hot oil and fry for 30-60 seconds or until golden brown.
  • Remove with slotted spoon; drain on paper towel.
  • Add a 1/2 teaspoon of baking powder to batter to make a much lighter crust, or use beer instead of milk for a barley flavor.

  1. For a batter that stays crispy longer try a simple beer batter: seasoned flour (salt, pepper, paprika - like for a breading. Then simple add enough beer, while whisking with a whisk, until you have a batter about as thick as latex paint. To use, dip the meat, fish, etc. into more of the seasoned flour or plain flour shake off excess and dip into the beer batter and then into the 360 degree oil to fry until golden brown. This batter retains its crispness better than others I think.
     
  2. Great, light crust! I've tried dozens of recipes for shrimp, usually with heavy flour crust--be sure to use the baking powder--this one is light, quick, easy. It has good flavor (adjust with Tony's, Ball's, etc to taste), try different oils (corn, veg, peanut) for another different taste. We chopped okra & squash ahead, dipped in leftover batter after shrimp finished--quick fried veggies for sides. Only seconds to cook, whole meal ready in a hurry--one fry pan, quick clean up!
     
  3. I added the 1/2 tsp baking powder to the batter mixture and dusted the shrimp with garlic powder before dredging them in the batter. They were light and airy and simply amazing! This recipe is definitely a keeper!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
