- 3 cups rice, cooked
- 2 cups shrimp, cooked, peeled, crawfish if you have
- 2 cups celery, chopped
- 1 cup peas, frozen
- 1⁄4 cup stuffed green olive, sliced
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1 teaspoon pepper
directions
- mix.
- chill.

Delicious! I didn't use the full amount of celery and probably should have reduced the mayo by a couple tablespoons. Nice combo of flavors and textures. DH really liked it; went back for a large 2nd bowl.
