  1. Heat Cast Iron skillet over grill until hot.
  2. Add 3/4 stick of butter to skillet and allow to melt.
  3. Chop onion.
  4. Smash and mince garlic.
  5. Quarter the Sea Scallops.
  6. Cut up shrimp.
  7. Add chopped onion and garlic to pan and allow to warm.
  8. Add shrimp, scallops, and crab meat to pan and turn over.
  9. Add chopped parsley, salt, pepper and lemon juice and turn over.
  10. Break Ritz crackers into large pieces and add to stuffing mixture.
  11. Turn contents in pan and allow to warm for 1 - 2 minutes, DO NOT COOK THE STUFFING.
  12. Remove stuffing mixture from grill.
  13. Bring Grill to 350 - 375 degrees and melt remaining butter.
  14. Split Live lobster in two place on baking sheet.
  15. Remove intestinal tract, tomalley, and roe.
  16. Crack the claws.
  17. Add 1/2 of the prepared stuffing mixture to each empty lobster body.
  18. Add butter to each half.
  19. Place into pre-heated grill and bake for 20 - 30 minutes.
  20. Remove from grill and add additional butter if desired to each half.
