  • To make BBQ Chicken: In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through.
  • Once chilled, coat the chicken with 2 tablespoons BBQ sauce; set aside in the refrigerator.
  • To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees F for one hour before cooking pizzas.
  • Use a large spoon to spread ¼ cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle 1 tablespoon smoked Gouda cheese over the sauce. Cover with ¾ cup shredded Mozzarella. Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place approximately 18 to 20 pieces of red onion over the surface. Sprinkle an additional ¼ cup Mozzarella over the top of the pizza.
  • Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly, 8 to 10 minutes. When the pizza is cooked, carefully remove it from the oven; sprinkle 1 tablespoon cilantro over the hot surface. Slice.

  1. Wow! This was so good. My daughter made this using trader joe's whole wheat pizza dough, leftover roasted chicken, sweet baby ray's bbq sauce, red onion and Monterrey jack cheese. Would have loved to add cilantro but didn't have any this time. Will definitely make again. Thanks for posting!
     
  2. The pizza is very good. I didn't realize the recipe made 2 medium pizzas until I was halfway through. I made a 14" pizza with regular pizza dough and used most of the chicken.
     
  3. This was an overwhelming success. I used a homemade whole wheat crust and just used mozzarella as I couldn't find any smoked gouda. The results were delicious! There's no CPK in my area so it's good to know that I can make a copycat version of this delicious pizza. Will make again--thanks for posting!
     
  4. Add some fresh garlic! I made two of these in the same evening: one with and one without fresh garlic. The one with garlic was so much more tasty. Otherwise, this is a great and simple recipe. I did mine in my new ceramic kettle BBQ.
     
  5. I tried this using cheddar cheese instead of mozzarella and everyone adored it, but it's excellent whatever cheese you decide to use.

  1. Loved this pizza! I used store-bought rotisserie chicken and shredded it instead, to make it even easier! Can't wait to make it again!
     
  2. Added mushrooms and bacon. Made a cilantro crema from yogurt, a bit of lime juice, cumin, and cilantro (salt/pepper obv) to drizzle over. Added some cheddar. Good stuff.
