BBQ Meat Loaves With Cheddar Potatoes

  • Preheat broiler. Cover broiling rack with foil, extending foil over rim.
  • In medium bowl, combine beef, egg, crumbs, salt, and 1/4 cup BBQ sauce just until blended. On foil-line rack, shape meat mixture into four-inch-long oval loaves.
  • Place rack in broiler. Broil meat loaves about 4 inches from heat source 12 minutes, turning onces. Turn loeaves; spoon remaining sauce on top. Broil 1-2 minutes to set sauce.
  • Meanwhile, in 2-quart saucepan, heat potatoes and milk over medium heat, stirring, just until hot. Remove pan from heat. Gently swirl in cheddar. Serve with meat loaves.

  1. A really quick and simple dinner solution that was enjoyed by the whole family.The meatloaf was moist with a nice texture,the mash good and comforting. A nice economical family meal,that's perfect when time is short. Made and reviewed for Spring PAC 2009.
