Bean and Veggie Burgers

ingredients
- 2 cups red kidney beans, drained, rinsed (from 19-oz can)
- 1⁄2 cup uncooked rolled oats
- 1⁄2 cup chopped fresh mushrooms
- 1⁄4 cup chopped onion
- 1 small carrot, shredded
- 1⁄2 medium red bell pepper, chopped
- 1 garlic clove, minced
- 2 tablespoons ketchup
- 3⁄4 teaspoon salt
- 4 lettuce leaves
- 4 slices tomatoes
- 4 hamburger buns, split
directions
- In food processor bowl with metal blade, combine beans, oats, mushrooms, onion, carrot, bell pepper, garlic, ketchup and salt; process with on/off pulses until coarsely chopped. DO NOT PUREE.
- Shape mixture into 4 patties, 1/2 inch thick.
- Spray broiler pan with nonstick cooking spray.
- Place patties on sprayed pan.
- Broil 4 to 6 inches from heat for 10 to 12 minutes or until patties are thoroughly heated, turning once.
- Place lettuce, tomato slices and patties on bottom halves of buns.
- If desired, top with ketchup or mustard.
- Cover with top halves of buns.

These had a nice flavor, but they were really soft, even after refrigerating overnight. The beans confused me... I bought the 19-oz can and began measuring out 2 cups only to discover the entire can was just barely two cups. So I had to use the whole can, but the recipe implies that you should only use part of the can. This made 4 incredibly huge patties... I think this should really make 6 patties. I will continue my quest for the perfect veggie burger recipe.

This was really fast to prep! My mixture made 5 patties (packing it down in a greased meas. cup). I refrig. for about an hour before cooking. I "eyeballed" the ketchup amount and wonder if I added too little, since my burgers were extremely fragile and dry. Regardless, my family ate without complaint! These were tasty topped with tomatillo salsa. I'll try these again with more ketchup. Thanks DuChick- Roxygirl

~a mother of 2 kids (19 and 22) who are extremely picky eaters. The mere mention of "healthy" sends them running in the opposite direction. They prefer the creamy, cheesy, fried stuff that they weren't brought up on!
~a wife of a wonderful man who fights an expanding waistline and will lovingly eat most anything I set before him. Everything is 5 stars to him. :) He's the easiest customer a cook could ask for!

But it's also stressful, so keep me away from the cookie jar! I really have to fight off the sugary, fat-laden stuff that has no worth beyond the momentary comfort in my mouth.
~and I'm also a daughter who was brought up on home cooked meals back when calories meant nothing and taste was everything! That is an idea built into my system that's hard to shake! My mother raised 8 kids (I'm #7) on her home-cooking and I always teased her that she didn't raise a single skinny kid! I luckily inherited her great love of cooking and baking. (I miss you Mom!)
~finally, I'm "mom" to the best Bichon in the world. He is Quincy, our kid in a dogsuit. He's 13 years old, but still a puppy to us.
