Directions

  1. Heat olive oil over medium heat. Saute onions, garlic, and spices until onions are soft.
  2. Stir in the beans, lentils, lemon juice, mint, and vegetable stock. Cover and simmer 20 minutes, until lentils are tender, stirring occasionally.
  3. Stir and spinach and simmer uncovered for 5 minutes.
