- 1⁄4 medium red onion, thinly sliced
- 1⁄2 cup fresh parsley leaves, packed
- 2 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon red wine vinegar
- salt, to taste
- pepper, to taste
directions
