  1. Spray a large saucepan with cooking spray; heat over medium heat until hot. Sauté carrots, onion and garlic until onion is tender, about 5 minutes.
  2. Stir in stock, tomatoes and their liquid, pureed beans and herbs. Heat to boiling; reduce heat and simmer, covered, until carrots are tender, about 10 minutes.
  3. Season to taste with salt and pepper. Pour soup into bowls; sprinkle with parsley.
