Bea's Broccoli Christmas Casserole

"This is slightly different version of the casserole recipes I have seen on this web site. I thought I would post it because it such a wonderful side dish. I got it about 35 years ago from my sister-in-law who served with Christmas prime rib dinner. It's just not Christmas in our house without this side dish. Use a very large skillet. You can make it ahead, and add 15 miutes to baking time if it has been refridgerated."

  • 2 (10 ounce) packages frozen chopped broccoli
  • 1 onion, chopped
  • 2 red peppers, chopped
  • 4 celery ribs, chopped
  • 12 cup butter, divided
  • 1 cup cooked rice (minute rice if you must but I like regular rice better)
  • 10 oz.can cream of mushroom soup
  • 8 ounces Cheez Whiz
  • 12 cup breadcrumbs

  • Melt 4 tablespoons of butter in a large skillet over med high heat.
  • Saute onion, red pepper, and celery until tender. About 10 minutes.
  • Add Cheez Whiz and soup and heat until melted.
  • Add rice and broccoli and stir to combine.
  • Pour broccoli mixture in a shallow 3qt. casserole dish that has been sprayed with a vegetable spray.
  • Melt remaining butter and bread crumbs.
  • Top casserole with buttered crumbs.
  • Bake, covered, in a pre heated 350 oven for 30 to 40 minutes or untill lightly browned and bubbly.
