Beef and Beer Chili, Easy Crockpot Recipe

"Recipe from the WebMD Weight Loss Clinic. They say "chili is one of America's favorite lunch or dinner entrees -- especially during the winter months. Served with cornbread, it really hits the spot. I happen to be a "hot" spice lightweight, so you'll need to add extra chili powder, cayenne pepper, or jalapeño if you want a hotter chili." I haven't made this but I want it in my cookbook so I'm posting it to share."

  • Heat the oil over medium-high heat in a large, nonstick frying pan or skillet. Add beef, onion, and garlic, stirring occasionally, until browned (about 3 minutes).
  • Spoon beef mixture into crock pot. Add paprika, chili powder, cumin, oregano, and stewed tomatoes (including liquid), beer, jalapeno if desired, and beans. Stir to combine. Cover and turn crock pot on LOW. Cook 8-10 hours.
  • Sprinkle each serving with minced onion and grated cheese if desired.

  2. I used a few pounds of carne asada that I cut-up, but this recipe could probably use more tomatos, Anaheim chili and salt. Wasn't too bad, otherwise.
     
  3. Delicious! I recommend using 2 lbs of beef as there was too much liquid for 1 lb. I used a jalapeno and a long hot chili pepper (about 1/4 c total chopped pepper) and ended up with just the right amount of heat. The beer gives a good flavor, we love this recipe!
     
  4. Great base recipe. I changed it up as follows: <br/>I ground up 4 large chicken breasts (approx 2 lbs) and substituted that for beef, also used 1 medium Red onion, 4 jalapenos sliced, 2 scorpion peppers chopped, 1 whole green bell pepper chopped, 3 tomatoes chopped and 20oz light beer.<br/>The result was a hot (but not too hot) chili with a great flavor. Will make again, but probably use 16oz beer and add a can of tomato paste to thicken the mixture.<br/><br/>Overall, extremely pleased!
     
  5. So very tasty. I decided not to add the pepper because my children don't like it too spicy, but the taste was just right any way. Will definitely be making this again.
