Beef and Sweet Potato Turnovers

"This was a recipe posted in Real Simple magazine. My Mother-in-law made it and it is wonderful! The puff pastry bakes up to a wonderful golden brown and is so light and flaky. This could be used with any kind of cheese and would be great with some cooked onions added to the mixture. I personally don't think you can taste the sweet potato very much, but it adds a slightly sweet flavor."

  • Brown ground beef with the garlic.
  • Peel sweet potato and grate.
  • Stir in sweet potato, spinach, salt and pepper.
  • Cut both sheets of puff pastry in half. Divide the beef mixture and cheese among 4 pieces of dough.
  • Cut each piece of dough in half to create 2 triangles.
  • Seal the edges with a fork.
  • Bake at 375 degrees for 25-30 minutes.
