- 2 large eggs
- 2⁄3 cup fine dry breadcrumb
- 1⁄3 cup ketchup
- 1 1⁄2 teaspoons seasoning salt
- 1⁄2 teaspoon pepper
- 2 lbs lean ground beef
- 1 cup onion, thinly sliced
- 1 cup carrot, grated
- 1 cup zucchini, grated and squeezed dry
- 1⁄3 cup fine dry breadcrumb
- 3 tablespoons hickory flavored barbecue sauce
- 2 tablespoons ketchup
- 2 teaspoons parsley flakes

directions
- Combine first 5 ingredients in large bowl.
- Add ground beef. Mix well. On large sheet of foil, pat out beef mixture to 10 x 15 inch rectangle.
- Combine next 7 ingredients in large bowl. Spread on top of beef rectangle, leaving 1 inch edge on 1 long side. Roll up from uncovered long side, jelly-roll style, using foil as a guide. Press seam against roll to seal. Place, seam-side down, on greased baking sheet with sides. Bake, uncovered, in 350F oven for 30 minutes.
- Combine second amount of barbecue sauce and third amount of ketchup in small cup. Spread on top of meatloaf. bake for another 25 to 30 minutes until fully cooked, and internal temperture of beef reaches 160°F
- Let stand for 10 minutes. Cuts into 8 slices.
