Beef Braised in Red Wine

- 1 1⁄2 lbs boneless beef round steak, cubed
- 2 tablespoons flour
- 1 large onion, chopped
- 1 teaspoon garlic, minced
- 2 cups fresh mushrooms, sliced
- 1 cup beef broth, divided
- 1 tablespoon olive oil
- 2 stalks celery, sliced
- 10 baby carrots
- 5 medium potatoes, peeled and halved
- 15 ounces tomato sauce
- 1 cup dry red wine, or
- 1 cup beef broth
- 1 teaspoon dried thyme
- 2 large bay leaves
- 1⁄2 teaspoon dry mustard
- 1⁄8 teaspoon celery seed
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
Directions
- Toss beef with flour in a shallow baking pan, sprayed with non -stick cooking spray.
- Bake at 350F, stirring occasionally, about 25 minutes.
- Heat onion, garlic, mushrooms, 1/4 c beef broth, and oil to boiling in a large Dutch oven.
- Reduce heat and simmer until onion is tender, about 10 minutes.
- Stir in remaining 3/4 cup broth and all 6 remaining ingredients except salt and pepper.
- Heat to boiling.
- Place Dutch oven, in the oven and bake, covered, until beef is tender, about 45 minutes.
- Season to taste with salt and pepper.
