Beef Creole (Boeuf Creole)

ingredients
- 2 cups cooked beef, coarsely chopped
- 2 tablespoons lard or 2 tablespoons drippings
- 1⁄2 green pepper, chopped
- 1 small onion, minced
- 3 tablespoons flour
- 8 ounces okra, drained
- cajun seasoning
- 1 cup celery, diced
- 2 cups canned tomatoes
- 1⁄2 teaspoon chili powder
- 1⁄2 teaspoon salt
- 1 tablespoon Worcestershire sauce
directions
- Heat lard in heavy skillet.
- Slowly saute meat, green pepper, onion, and celery for 10 minutes.
- Sprinkle with flour and blend inches.
- Add okra, seasonings, and tomatoes.
- Cook slowly for 20 minutes, or until done, stirring frequently.
