- 28 ounces canned tomato sauce
- 1 (28 ounce) can refried beans
- 1 (1 1/2 ounce) package enchilada seasoning (like Lawrys or Mccormick)
- 1 (1 1/2 ounce) package taco seasoning mix (Like Lawrys or Mccormick)
- 1 (6 ounce) can sliced ripe olives
- 1 lb ground beef
- 1 lb cheddar cheese, shredded
- 1 (20 ounce) package soft taco-size flour tortillas
directions
- Create the Enchilada Sauce mixture using the tomato sauce and the enchilada sauce seasoning packet. Heat sauce in a medium sized sauce pan on the stove.
- Cook the ground beef and season it with the taco seasoning mix according to the directions on the packet.
- Once the ground beef is cooked, mix into it the refried beans and the sliced olives.
- Spread a thin layer of the enchilada sauce (approx 1/2 a cup) into the bottom of your baking dish.
- Take one tortilla and spoon into it approx 1/3 cup of the beef and bean mixture. Cover the beef and bean mixture with approx 2 tablespoons of the enchilada sauce. Then sprinkle shredded cheese over the beef/bean/sauce filling.
- Roll the tortilla up and place it in the baking dish with the seam down.
- Once you have filled your pan with rolled up tortillas, cover the entire dish with the remaining sauce and then cheese.
- Bake uncovered at 350°F for approx 35 minutes or until heated through and cheese is slightly browned.
