  • Create the Enchilada Sauce mixture using the tomato sauce and the enchilada sauce seasoning packet. Heat sauce in a medium sized sauce pan on the stove.
  • Cook the ground beef and season it with the taco seasoning mix according to the directions on the packet.
  • Once the ground beef is cooked, mix into it the refried beans and the sliced olives.
  • Spread a thin layer of the enchilada sauce (approx 1/2 a cup) into the bottom of your baking dish.
  • Take one tortilla and spoon into it approx 1/3 cup of the beef and bean mixture. Cover the beef and bean mixture with approx 2 tablespoons of the enchilada sauce. Then sprinkle shredded cheese over the beef/bean/sauce filling.
  • Roll the tortilla up and place it in the baking dish with the seam down.
  • Once you have filled your pan with rolled up tortillas, cover the entire dish with the remaining sauce and then cheese.
  • Bake uncovered at 350°F for approx 35 minutes or until heated through and cheese is slightly browned.
