- 1 lb lean ground beef
- 1 (16 ounce) can refried beans
- 2 (4 ounce) cans green chilies, drained
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄2 teaspoon oregano leaves
- 2 1⁄2 cups sharp cheddar cheese, grated
- 3 teaspoons green onions, chopped
- 1 (19 ounce) can enchilada sauce
- 8 flour tortillas, 8 inch

directions
- Cook ground beef, salt, pepper, green chilies, onion, and garlic over medium heat until beef is browned and onion is tender. Drain well. Fold in refried beans.
- Preheat oven to 350 degrees.
- Pour 1/2 of enchilada sauce into a lightly greased 9x13 baking dish; sprinkle with oregano. Spoon 3-4 T of beef and bean mixture onto each tortilla, top with 2 T cheese. Roll up and place seam side down in sauce.
- Top tortillas with remaining enchilada sauce and cheese. Bake for 30 minutes. Garnish with green onions and sourc cream.
- Serves 4-6.
