Beef Enchiladas

"This is a recipe we used for years. We've modified it a few times and it gets a little better each time. It can be made ahead and frozen."

  • Cook ground beef, salt, pepper, green chilies, onion, and garlic over medium heat until beef is browned and onion is tender. Drain well. Fold in refried beans.
  • Preheat oven to 350 degrees.
  • Pour 1/2 of enchilada sauce into a lightly greased 9x13 baking dish; sprinkle with oregano. Spoon 3-4 T of beef and bean mixture onto each tortilla, top with 2 T cheese. Roll up and place seam side down in sauce.
  • Top tortillas with remaining enchilada sauce and cheese. Bake for 30 minutes. Garnish with green onions and sourc cream.
  • Serves 4-6.
