- 12 lbs lean ground beef
- 4 lbs Italian sausage
- 2 tablespoons italian seasoning
- 6 tablespoons instant minced onion
- 1⁄2 cup minced garlic
- 1 1⁄2 tablespoons salt
- 1 tablespoon pepper
- 20 slices bread
- 6 eggs
- 8 ounces olive oil
- 8 cups shredded mozzarella cheese
- 4 cups parmesan cheese
- 8 (8 ounce) boxes manicotti
- 1 (1 gallon) can tomatoes
- 2 (1 gallon) cans spaghetti sauce
- 1⁄2 gallon water
- 8 cups shredded mozzarella cheese
directions
- Cook meat, seasoning, onion, garlic, salt and pepper with 2 cups of water until onion is tender.
- In a bowl mix bread, eggs, olive oil and cheeses. Add meat mixture and mix well.
- Stuff mixture into manicotti shells.
- Break up tomatoes, add 1 can of sauce and the water. Pour evenly into bottom of greased pans.
- Arrange shells over sauce and top with remaining sauce.
- Cover and bake at 350F for 1 hour or until tender.
- While still hot sprinkle the second amount of mozzarella over top and let melt before serving.

I'm a mom of 3. My son is 22, married and in the Army. My daughters are 16 and 5. My oldest one is in the Army JROTC and the Nave Sea Cadets and will be going to New Mexico for Culinary School this summer. My little one is in a special Kindergarten class that teaches both English and Spanish.
I work at our church's gym and I cook for our church. I cook every Wed. for 100 to 125 of our church members. I cook a normal meal, a healthy meal and a kids meal.
I also cook for my daughter’s Sea Cadets drills. At the drills there are 40 to 60 teenagers. I am teaching my daughter and another cadet how to cook for their group of cadets. I teach them how to plan the menus for their monthly week-enders. I teach them how to figure how much they need, how much it will cost and then take them shopping for their supplies. We serve breakfast, lunch and dinner.
