Beef 'n' Chili Beans

- 3 lbs beef stew meat, cut into 1-inch cubes, trim fat
- 2 tablespoons brown sugar
- 1 1⁄2 teaspoons ground mustard
- 1 teaspoon salt
- 1 teaspoon paprika
- 1⁄2 teaspoon chili powder
- 1⁄4 teaspoon pepper
- 1 large onion, chopped
- 2 (10 ounce) cans diced tomatoes and green chilies, undrained
- 1 (15 ounce) can ranch style beans or (15 ounce) can chili beans, undrained
- 1 (15 1/4 ounce) can whole kernel corn, drained
directions
- Place the beef in a 3-quart slow cooker.
- Combine the brown sugar, mustard, salt, paprika, chili powder and pepper; sprinkle over beef and toss to coat.
- Top with onion, tomatoes, beans, and corn.
- Cover and cook on low for 6-8 hours or until meat is tender.

Gosh this recipe is well worth saving! I did make a change in the Rotel because it is a bit to hot for us so I used 2 cans of petite diced tomatoes with two 4 ounce cans of mild chilies. Enjoy Bush's chili beans so went ahead and used them. Liked that the meat didnt get lost in the beans and corn and will be a stick to your ribs sort of meal when I serve it over brown rice. Good find kitty....thank you! Made and reviewed for KK's Recipe Tag game.
