  • Heat oven to 350°.
  • Mix browned meat, salsa, corn, Miracle Whip and chili powder.
  • Layer half of this mixture in a 2-quart casserole dish, then half of the chips, and half of the cheese.
  • Repeat layers.
  • Bake 20 minutes, or until heated through.
  • May top with shredded lettuce and tomatoes, if desired.

  1. Fantastic and so easy. My family loves Tex-Mex food and this was devoured. I used medium heat salsa. The miracle whip gave it a creaminess with tang.I used the full 2 T chile powder and it gave it just the right amount of heat. This will become a regular in our home.
     
  2. This was delicious. I used very lean beef, WOW tortilla chips, fat free mayo and fat free cheddar cheese to save on calories and fat. I will make this again!
     
  3. This is another easy recipe for hectic weeknights. I always use frozen corn (that I have partial thawed) rather than the canned. Hubby and I love Tex-Mex. This is quick and satisfying.
     
  4. I prepared this recipe for DH and I (halved it) and didn't change a thing. It was great! We both really enjoyed it. I used meduim salsa and 3/4 T chili powder and it was just right for us (spicy enough for DH, not too spicy for me).
     
  5. The combination of ingredients made me hesitate, but after trying it--it's very good! We'll definitely make this easy and fast dish again.
