  1. Roast should be @ room temperature before you start cooking. Bake in open roaster pan 1 1/4 hours fat side up, in a 375 oven.
  2. Turn off oven and do not open the door.Leave the meat in unopened oven for about 2 hours.
  3. Forty five minutes before serving, sprinkle with salt and pepper turn oven to 300. You can add other spices if you would like.
  4. This recipe is fine for any size roast over 4 pounds. Count on one pound per person. All the slices will be the same shade of pink.
