Beef Pie With Rice a Roni

  • Preheat oven to 400.
  • In a skillet, lightly brown the Rice A Roni in the butter (keep flavor pack aside).
  • Add and brown the ground beef, crumble finely.
  • Stir in hot water.
  • Add contents of the beef flavored packet that came with Rice A Roni.
  • Add salt & pepper and mix.
  • Cover and simmer for 15min on low.
  • Cool slightly.
  • Stir in 2 well beaten eggs.
  • Fill pie shell with mixture.
  • Top with bacon slices.
  • Bake for 20 minutes.
  • note: the bacon cooking on top of the pie is used to add flavor, but does not get crisp. You can brown the bacon slightly before adding it if you like.

  1. Back in the 1970's this was on my weekly menu! I have been looking for it for years. In fact, I called the company and even they could not find it! Thanks for bringing back a family favorite. This is the only time I ever use Rice-A-Roni but it is delicious to say the least. Thanks for the memory!
     
  2. My mother would make this while I was growing up in the 70’s and now I make it for my family. I add chopped onion and mushrooms while browning the rice. I don’t add salt or the bacon on top.
     
  3. Love this recipe. I've been making it since the 70's too! One change I've made is to add stewed tomatoes in place of the water.
     
  4. Been doing this for years as well. I saute chopped onions & mushrooms in the butter before adding rice mix. I get 2 pies out of this & always freeze one uncooked. Make a top lattice-work crust of thin bacon slices. As the bacon cooks it gives the filling an even better flavor!

I made this recipe almost as written....I left out the salt as I usually find that anything with a seasoning packet usually packs enough salt for me....if I needed more I could add it at the table. I did put the bacon into the microwave for 1 1/2 minutes. I then cut the bacon into 1 1/2 inch pieces so I could distribute it over the pie more evenly. When I removed the pie from the oven, I let it set for about 10-15 mins. so it would set up and hold its shape for cutting. Because the bacon had some precooking...it did crisp up very nicely in the oven. The recipe was okay, husband thought it was very good. I will probably make it again when something quick is needed.

  1. No salt needed! rice-a-roni has plenty of salt with out adding any.
