Beef Stroganoff

"I have made this for years, my oldest used to call it beef strong enuf:) she still loves it, the gravy is fantastic. I serve this over cooked egg noodles. Updating to day I have been adding 1 tbsp fresh tarragon lately, optional."

directions

  • In skillet, melt butter; add steak, salt & pepper; saute in batches until browned; remove and set aside.
  • Add scallions to the pan, saute.
  • Add flour and stir.
  • Add mustard, broth, and wine; stir and bring to simmer.
  • Add scallions and beef back to pan; cover and simmer for 30 minutes.
  • Stir and simmer for 20 minutes; add mushrooms and continue to cook for 5-10 minutes.
  • Uncover and add sour cream.
  • Simmer uncovered, stirring until well blended. serve over noodles.

Rummaging through an ill-equipped pre-grocery day fridge, I mistakingly used hot mustard for the Dijon; substituted a large heel (and VERY much-more-than-the-2-tbsp the recipe called for) of red wine instead of white; and browned the mushrooms in chopped garlic before tossing them into the beef. It all came out a definite 5 stars. Thank you Chia. This is an easy one. I shall make it often.
     
  2. I have made Beef Stroganoff for 30 years and it has always been good. This was exceptional. My husband asked if I could make it again the next night. I used top loin steak and bella mushrooms. I cut down the cooking time because of the tender cut of beef. Thanks for a great recipe!
     
  3. MMMMMMMMMM, very tasty. My hubby kept coming in the kitchen and asking what smelled so good! I did have to add about half a cup of water to the sauce, it was too thick, added more salt, and used onions instead of scallions.I also browned the onions with the meat, gave it more flavor. But all in all, I loved it! Will add it to my permanent recipe file! Thanks Chia!
     
  4. An unreserved five stars. This was wonderful. A few changes, though not substantial: I halved both the butter and the sour cream, added a generous pinch of dried parsley, and subbed red wine for white. Also, since I was out of broth, I used half tomato sauce and half water in its place-- that added a pretty red color. The Dijon was a great touch, and the meat and mushrooms were so tender. Served over brown rice. The sauce was so good! I'll make it again.

<p>latest update, as all my fb friends know i have been very ill for the past 4 mos, but now i am on the road ro recovery. i've had 2 surgeries and broke nt elbow a week after the first one, which basically incapacitatedme forr 2 mos. happy to say i am doing pt, anf will hopefully be able to cook again</p> <p>i stopped working so i could spend more time in my fla house renovating, but this was a minor setback, going to do the bathrooms this summer.</p> <p>&nbsp;</p> <p><br />in NY i used to have an (at home) jewelry business, but i incorporated it into the store's gift dept., they sell it for me now. <br />cooking is my passion, my hobby, my relaxation, but i love going out for a good meal anytime. being born and growing up in manhattan, ny gave me the opportunity to try many new foods over the years, in many great restaurants. and travelling with my dh enlightened me to the wonderful ingredients and cuisines of san francisco, among other places. <br />the new corporate spouse deal is to do a day of cooking lessons/lunch, and shopping, so i have seen demo classes in ft lauderdale, san antonio, atlanta in the past few years plus taken a few cooking classes in chinese dim sum and noodles in joseph poon's, in philly. <br />several years ago i had the pleasure of being on several of the food network shows, ready set cook and taste test, which was like food jeopardy. i didn't win either, but it was so much fun!
