Beef Tamale Bake

  • 1 lb ground beef
  • 1 cup chopped onion
  • 14 cup chopped jalapeno pepper
  • 2 tablespoons garlic powder
  • 4 ounces of chopped green chilies
  • 10 ounces enchilada sauce
  • 15 ounces of whole corn kernels
  • 8 12 ounces cornbread, muffin mix (follow mix directions or add 1/3 cup milk and 1 egg)
  • 1 -2 cup of shredded cheese (I used Colby Jack)

  • Pre-heat oven 350 degrees. Brown the beef and drain the oil. Add onion, jalapenos, green chillis, garlic powder, enchilada sauce and corn kernals to beef.
  • Spray baking pan and spoon meat mixture into pan. Mix up muffin mix with milk and egg. Spoon a layer over the meat mixture. Sprinkle cheese over top and bake for 30-40 minutes until cheese is baked over.

  1. As is this recipe (to our family) was only 1 star, too much garlic. But when I used 1/2 TBL of garlic and added a can of kidney beans it was SOOOOO yummy. Thanks for sharing.
