Beef With Fresh Asparagus

"I believe this is from the Yan Can Cookbook that I borrowed from my sister-in-law years ago. This is a flavorful and colorful combination. I think I may have added more soy sauce during the cooking process when I made this, so naturally, make the necessary adjustments to suit your family. It would probably be good with a little heat added to it (crushed red pepper or chiles maybe) Prep time includes 2 hours for marination."

  • Mix together soy sauce, wine, sesame oil, ginger, cornstarch and oil for marinade.
  • Cut beef across the grain into 1 1/2 by 2 inch slices. Marinate 2 hours.
  • Break off and discard tough ends of asparagus. Cut diagonally into 1 1/2-2 inch lengths.
  • Peel and cut carrot into 1/2 inch rounds.
  • Heat oil in wok or skillet over high heat.
  • Add ginger and stif for 30 seconds.
  • Add beef to skillet and stir-fry till redness disappears, about 1 1/2 to 2 minutes. Remove and set aside.
  • Add asparagus and carrots to wok/skillet, stirring for 30 seconds.
  • Stir in remaining ingredients, except cornstarch solution.
  • Cover and cook for 2 1/2-3 minutes.
  • Return beef to skillet, stir well and thicken with cornstarch.
  • Serve hot over cooked rice.

  1. Excellent quick weekday meal! I used London Broil instead of flank steak which worked well. The only difference I made in the recipe was to not cook all the pink out of the beef, just because that's the way we like it! I think the addition of red pepper flakes is a great idea and will try that next time we make it. Also maybe some mushrooms. A definite keeper. Thanks for sharing!
     
  2. Yum, we loved this. I also doubled the sauce and added red pepper flakes as it wasn't quite spicy enough for us. Also toasted some cashews to sprinkle over the top. I'm not keen on carrots so instead used an onion. Keeper for our family.

  4. We really loved this. I doubled the sauce in the stir fry because we like lots of sauce. I love how you can taste the asapagus in the sauce, all of the flavors melded so well. I added about a tsp. of crushed red pepper to make it spicy. Served it with jasmine rice and egg rolls. I think you could sub broccoli for the asapargus if you wanted...although I would miss the asparagus! Thanks Pattyikay, this is a favorite!

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year&nbsp;- even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember&nbsp;- they do it the same way they do in the summer&nbsp;- with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains&nbsp;- what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes&nbsp;- I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees&nbsp;- a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now).
