Beer & Cheese Bread for Bread Maker

"Makes a nice high dense loaf that is great for grilled cheese, crotons or chili to name a few! Try this once and it will be one of your old stand bys for it is really easy yet impressive. You can play around with adding chives or herbs or different kinds of cheese.... have fun. I did invent this recipe myself just based on basic bread machine principles!"

  • Pour warm beer into bread maker pan.
  • In a large bowl, fluff up or wisk gently together, flour, cheese, sugar and salt.
  • Put this mixture on top of beer.
  • sprinkle yeast over flour layer.
  • near the end of baking, after bread has risen as high as it will get (last 1/2 hour left or so) quickly top loaf with remaining cup of cheese.
  • Select "basic bread" and regular crust
  • Baking time varies on your machine.

  1. Very nice bread with lots of flavor. I used basil, oregano and thyme. I skipped the addition of the cheese near the end of the cycle, since my machine makes a vertical loaf. I added extra cheese to mix.
     
  2. Made this last night for a large get together. Nothing but praise. Bread was delicious and moist. I did not pay attention (my bad) to directions, so I made it like a typical bread in my bread maker i.e., wet ingredients first (included old cheddar cheese - shredded) and all dry ingredients last. Recipe did not say if it was for a regular or large size bread, but I made it a large and it was perfect. I also set the crust colour to medium. For herbs, I used 2 huge rounded tbsp of oregano, 1 huge rounded tbsp of dill and then I added 1 huge rounded tsp,. of cayenne. Should have used lots more cayenne as nobody tasted it, including me. There was no 'bite' to it, which I had hoped for, Finally, I used Guinness Draught Beer and though I started with 1 and 1/3 cups, I had to add about 3-4 tbsp more in the first hour as it seemed way too dry. I also put in about 1/2 tsp more of bread yeast to all my breads so it rises just a bit more - so far, never a problem. Bread was perfect, thank you for this recipe.
