  • 4 sprigs thyme
  • 12 ounce butter
  • sea salt, flakes
  • 1 lb baby beets (cut larger ones in half)
  • balsamic vinegar

directions

  • Heat the oven to 350°F
  • Divide the beets between 4 parchment bags or make foil parcels.
  • Add a sprig of thyme, a knob of butter and a few drops of balsamic to each and seal.
  • Bake for 30-40 minutes or until the beets are tender. Serve in the bags.
