Belgian Waffles Texas Style

"The State Fair of Texas serves Belian Waffles topped with powdered sugar and fresh sliced strawberries. They are out of this world and have been a State Fair tradition for years. This is my version of those wonderful waffles."

  • Sprinkle the yeast over warm milk; stir to dissolve.
  • Beat the egg yolks and add to yeast mixture along with vanilla.
  • Blend together the flour, salt and sugar; add to liquid ingredients.
  • Stir in the melted butter and combine well.
  • Beat the egg whites until stiff but not dry.
  • Carefully fold beaten egg whites into batter and let the mixture stand in a warm place about 45 minutes or until it doubles in bulk.
  • Using approximately 1/2 cup mix per waffle, pour into preheated waffle baker and bake according to manufacturers recommendations.
  • Spoon fresh strawberries onto waffles and sprinkle with powdered sugar.
  • Serve immediately.

  1. These are restaurant quality - they are quite a bit of work - specifically lots of pots to clean. The only thing I changed was the amount of yeast - since I did not have a jar I used one package (equivalent to 2 1/4 tsps) and it did not effect the recipe at all. This is the first waffle recipe I've tried yet and the next will be an easier version. Will save this for special occasions of if I know I have more time. Will try to modify to cut the amount of bowls use for prep.
     
  2. Don't know what makes this Texas style, but they are certainly great. They are nice and thick and light and fluffy on the inside and brown and crisp on the outside. I did not find them difficult or use to many pans, and even if they did the end result makes them worth the effort. I made just as directed, which made a LOT, but froze the extras for another day. Served with raspberries and whip cream, a very special breakfast.
     
  3. I decided to make these because of all the great reviews I read. Me and my mother thought they tasted very bland, they were bearable to me but my mom threw hers away. Maybe we are not used to Belgian waffles with yeast as she said they tasted too much like bread to her. Next time I will try a recipe w/o yeast. But I must say, they were crispy on the outside, and fluffy on the inside, just not a good flavor.
     
  4. Wonderful waffles! They really are restaurant quality. We enjoyed them with butter and pure maple syrup. Yum!
     
  5. Delicious! We loved these with butter and syrup. I used 1 1/2 tsp yeast and they proofed well and didn't tasty too yeasty at all. Next time I would even try 1 tsp. I didn't bother separating the eggs (call me lazy) and it seemed just fine. Maybe I'll try that next time to see if it makes a big difference in texture. Thanks for posting!

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
