- 1 (10 inch) prebaked pie shells (27 cm/10-inch or 11-inch)
- 1 small red bell pepper
- 1 small orange bell pepper
- 1 small green bell pepper
- 1 large onion
- 2 teaspoons oil
- 2 eggs
- 1 egg yolk
- 100 ml heavy cream
- 1 orange, juice and zest of
- salt
- sugar
- ground paprika
- 1 -2 tablespoon fresh chives, chopped
- 10 black olives
- 75 -100 g feta cheese
directions
- Preheat oven to 200°C.
- Chop bell peppers and onion.
- Heat the oil in a pan, cook bell peppers and onions until softened.
- Mix eggs, egg yolk and cream. Add orange zest and juice, mix.
- Pour cream&egg mixture into the pie shell. Add cooked bell peppers and onions. Sprinkle with a bit of salt, sugar and ground paprika. Sprinkle chives on top.
- Add olives and cubed feta.
- Bake in the preheated oven for about 20 minutes or until set.
