Ingredients Nutrition

  • 1 chicken breast, marinated with olive oil and rosemary then grilled
  • 14 cup fennel, shaved
  • 14 cup pear, cut in matchsticks
  • 18 cup parmesan cheese, shaved
  • 1 fig, baby sized, cut into slices
  • 2 tablespoons cashews
  • 14 cup red pepper, cut into matchsticks
  • 1 tablespoon red onion, shaved
  • 2 cups lettuce, mixed, red romaine, arugula
  • 2 tablespoons fat-free honey-dijon salad dressing

Directions

  1. Mix all ingredients. Place sliced chicken breast ontop of lettuce mixture. Serve with dijon vinegrette.
