Berry Ice Pops

"Kids love these berry popsicles that are a lot cheaper than the store-bought popsicles. Recipe adapted from Bon Appetit (May, 1981). Prep time does not include freezing time (about 2-4 hours)"

ingredients

  • 1 12 1 1/2 cups blueberries or 1 1/2 cups raspberries, fresh or frozen,if frozen thaw berries (or a mixture of combined berries)
  • 12 cup sugar
  • 1 egg white (optional)

directions

  • Place ingredients in blender and blend until smooth.
  • Pour into small paper cups (I use bathroom 3-oz size), add popsicle stick.
  • Sometimes it's easier to add the stick after they freeze for a little while.
  • Freeze until firm.

  1. I made these with a combination of frozen raspberries & fresh strawberries in those special Tupperware popsicle makers and left in the freezer overnight. My grandchildren loved them. Not only economical, they are more nutritious than store bought. Thanx Ellie!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
