ingredients
- 3⁄4 cup shortening
- 1 1⁄2 cups sugar
- 3 eggs
- 3⁄4 cup milk
- 3 1⁄2 cups flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups mashed bananas
- 2 tablespoons lemon juice
- 1⁄2 cup chopped nuts (optional)
directions
- Cream shortening and sugar in mixing bowl.
- Add eggs and beat for 4 minutes.
- Add sifted dry ingredients a little at a time alternating with the milk.
- Add lemon juice to mashed bananas and fold into batter.
- Add chopped nuts if desired.
- Bake in 3 small loaf pans for 40-50 mins at 350*.
