  1. Heat oven to 350 F Grease bottoms only 2 (8x4-inch) loaf pans or 1 (9x5-inch) loaf pan.
  2. In large bowl, mix sugar and butter. Add eggs, bananas,buttermilk and vanilla; beat with electric mixer on medium speed till smooth. Stir in flour, bakingsoda, salt and nuts just until moistened. Pour batter into pans.
  3. Bake 8 inch loaves 1 hour, 9-inch loaf 1 hour and 15 min or until inserted toothpick comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rack. Cool one hour before slicing.
