- Preferably bring fresh beets in from garden. [Side-note; beets are so easy to grow--for most of the country, plant beet seeds in a row about 1/2" deep in April or May. By August start harvesting delicious beets! You may need to thin your rows once to about 1 beet every 3" or so].
- Clean off, cut off greens (save for salad) wash and scrub if needed, rinse.
- boil beets til fork tender [fork wil slip in easily] approx 20 minutes.
- rinse in cold water, skins will peel/slip off. Trim tops and bottoms, let cool.
- Cube beets into 1" cubes.
- Chop a medium to large onion in equal size to the beets and heat butter in a frying pan.
- Fry onions for a few minutes then add beets and fry for a few more minutes.
- sprinkle with kosher or sea salt and grind of black pepper. feel free to get creative with this one!
- Enjoy with any meal. My wife and I love frying small new potatoes in coconut oil the morning and when potatoes are soft, add beets and onions from the night before stir and fry together for a few minutes. serve with a fried egg and good toast. Awesome breakfast too.
