- 1 1⁄2 cups white sugar
- 1⁄2 cup brown sugar
- 1 1⁄2 cups vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3⁄4 teaspoon nutmeg
- 1⁄2 teaspoon ginger
- 1 lb grated carrot
- 1⁄2 cup pecan chips
- 1⁄2 cup raisins
- frosting
- 4 cups confectioners flour
- 8 ounces softened cream cheese
- 4 ounces softened butter
- 4 teaspoons vanilla
directions
- Preheat oven to 325 degrees.
- Grease Bundt pan.
- Beat oil, sugar and eggs.
- Sift Flour, Baking Soda, Baking Powder, Salt , Cinnamon,Nutmeg and Ginger into the sugar and oil mixture.
- Beat until just mixed -- Do not over mix.
- Stir in Grated Carrots, Raisins and Pecans.
- Bake for approx 45 mins, or until cake tester comes out clean,usually takes mine longer than 45 minutes.
- To make frosting, Beat softened Cream cheese and Butter until well mixed and smooth and creamy, add the confectioners sugar in 1 cup increments and then add the vanilla, mix well and frost cake.
