- 3 cups dried split peas
- 1 bay leaf
- 2 teaspoons salt
- 7 cups water
- 1 ham hock (optional)
- 1 cup minced onion
- 3 crushed garlic cloves
- 1 cup minced celery
- 1 small thinly sliced potato
- 2 cups sliced carrots
- 1⁄4 cup dry red wine
- 1⁄4 teaspoon dry mustard
- 1⁄3 teaspoon thyme
- 3 drops sesame oil
- 3 tablespoons vinegar
- 1 cup chopped tomato
- 1⁄4 cup freshly chopped fresh parsley
directions
- Simmer 3—4 hours: dry green splits, bay leaf, salt, water and ham hock.
- Saute in 2 Tbsp oil: onion, crushed garlic, celery, potato, and carrots.
- Steam after saute and add to soup when tender. Continue simmering.
- About 15 minutes before serving time, add: dry red wine, dry mustard, thyme, a few drops of sesame oil.
- Just before serving add: vinegar, chopped tomatoes, freshly—chopped parsley.
- We serve this with red wine vinegar on the table.
