  1. Preheat oven to 350°F.
  2. Grease and flour 2 8x4 inch loaf pans.
  3. Combine flour, brown sugar, salt and baking soda in a large bowl, make well in center.
  4. In a separate bowl, whisk eggs, vanilla, and buttermilk.
  5. Pour into the dry mix and blend slightly, by hand with wooden spoon.
  6. Add melted margarine and mix a bit more.
  7. Add mashed bananas and nuts if using.
  8. Mix until ingredients are blended (do not over mix!).
  9. Spoon batter into pans and top with browns sugar and nuts if desired.
  10. Bake 45-55 mins (20-25 for muffins).
  11. Turn out to cool.
  12. Slice and serve with butter.
