  1. Preheat oven to 325-350 degrees celcius.
  2. Grease baking pan with margarine.
  3. Whisk together eggs, soy milk, & vanilla
  4. Place bread in shallow baking pan 3-4 slices across (a little squishing is okay).
  5. Pour egg mixture over bread - ensuring that all pieces are covered.
  6. Sprinke with spices.
  7. Place on middle oven rack & bake for 20-25 minutes.
  8. Plate up with mixed berries sprinkled with a bit of powdered sugar (to taste).
