Better Banana Walnut Bread

"I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping. Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice."

My name is Nikki. I currently live in Raleigh, NC. My husband and I moved here in May of '07 from Huntsville, AL. Before I lived in Huntsville I was in Atlanta, GA and I was born in Tallahassee, FL. I have a degree in business, but I am blessed to be able to stay at home with my son Tristan. I love all kinds of art, gardening, shopping, decorating, and of course cooking! I believe in living a green healthy life style and try to reflect that in my cooking as much as possible.
