(Better for You ) Cabbage and Noodles

- 3 cups green cabbage, chopped (about one head)
- 1 medium onion, chopped
- 1 teaspoon olive oil
- 1 cup carrot, shredded
- 3 garlic cloves, minced
- 8 ounces egg noodles, uncooked
- 2 tablespoons butter
- 1⁄4 cup chicken broth
- 2 teaspoons salt, divided
- 1⁄4 teaspoon pepper
directions
- Heat a large skillet and add olive oil. Add the onion, carrots and garlic and saute for about 5-10 min, or until tender. Season with 1 tsp.salt and pepper.
- In another pot, boil salted water ( use the other 1 tsp of salt water) add noodles and cook to package directions.
- While the noodles are cooking, add the cabbage and about a 1/4 chicken broth back into the skillet, (season again with salt and pepper if needed.) Cover and let the cabbage steam until it is tender.
- When the noodles are done, and the cabbage is tender, add the drained noodles to the cabbage mixture and mix in the butter until melted.
- Serve.
