  • Slice Squash and onions.
  • Put them in a large pan with enough water to cover the bottom, plus a few extra seconds.
  • Bring to boil, then let the water from the vegetables cook out. Takes about 20 minutes.
  • Add salt and pepper.
  • When veggies are nice and soft drain out the excess fluids. Then smush the veggies. Don't make them mush, but smush nicely.
  • Mix together, in a separate bowl, the egg and cheese. Then add the hot veggies, allowing the cheese to melt and hold it all together.
  • Spray a casserole dish with PAM.
  • Add the mixture to dish, sprinkle with more ground pepper, and place in preheated 350 oven for about 30 minutes. Or until top is nicely browned and slightly bubbly.
