“After finding a recipe in Cooking Light for a Lowfat Chocolate Chip Cookie - I decided to try and see if I could use the same concept with Oatmeal Raisin Cookies - it was a success! I've also made these using spelt flour and they were just as yummy!!”

  1. Preheat oven to 375 degrees.
  2. In large bowl, Combine oil, honey, sugars, extracts and egg whites.
  3. In second bowl, combine flour, oats, baking soda, cinnamon and salt.
  4. Add dry to wet and combine.
  5. Add in raisins.
  6. Drop by rounded tablespoons onto silpat lined baking sheets.
  7. Bake 8 minutes.
