- 2 cups cider vinegar
- 1 cup water
- 1 cup sugar
- 1⁄4 teaspoon pickling spices
- 1⁄2 teaspoon mustard seeds
- 1⁄2 onion (halved)
- 1 large bay leaf
- 1 1⁄2 teaspoons peppercorns
- 1⁄2 bunch dill (minced)
- 4 beets (cooked, peeled, sliced)
- 6 hard-boiled eggs (peeled)
directions
- Bring the vinegar, water, sugar, pickling spice, seeds, onion, bay leaf, peppercorns and dill to a boil.
- Reduce. Cover. Simmer 30 minutes.
- Let cool.
- Add the beets and eggs.
- Cover. Chill at least 72 hours.
